340 g Milk (2%)

100 g Cream

600 g Bread Flour

8 g Salt

105 g Honey

55g Butter - ROOM TEMP (1/2 Stick) - mix in later

Add starter, milk, cream, flour, salt and honey to stand mixer bowl and KNEAD for 7-10 min until ingredients are well incorporated and dough begins to ball up.

Once butter has been added - KNEAD for 15 MIN (Speed 2 ONLY - Kitchen Aid - mixer gets HOT) to achieve WINDOWPANE.

BAKE: Preheat oven to 400 degrees - once heated add loaves and turn down to 350 degrees - Bake for 40 minutes.

Betsy's "Tin" Bread

2 c. buttermilk
1tsp salt
1tsp soda
1 cup butter and shortening mix
(I have used all stick margarine when that's all I have on hand)

Flour ( make a dough a good consistency for rolling)

Roll out on floured cloth with a rolling pin with bumps.. Ivy has Betsy's handmade one.
The "store bought" one I have has smaller bumps so it gets flatter and not as "bumpy" as Betsy's
Using a lefse stick to transfer and turn, bake on lefse griddle.. turn when top side gets raised air bubbles..

Betsy always stored it in a round metal decorative "tin".  Serve with butter with a meal or "between meal 'lunch'"

Ivy always makes and brings this when they come for thanksgiving.. probably about the time I share the tradition!!!   Mama Ruth

Zucchini - Mandarin Bread

3 eggs
1 c. oil
2 c. sugar
1 teas. cinnamon
1- (11 oz) can mandarin oranges (drained & chopped)
3 c. flour
1 teas. salt
1 teas. soda
1 teas. baking powder
3 teas. vanilla
2 c. shredded zucchini ( I use 3 c.)

Mix all in order as given.
Grease or spray pan, then flour.
Bake 325 degrees for 1 hour or till center is done - seems to take longer in my oven probably because this recipe makes one very large loaf of bread.
Very moist and good with butter or margarine on it.

note: a large ripe banana can also be used instead of oranges
let pan cool about 10 minutes, then take butter knife and cut around edges of pan to loosen bread before dumping out of pan. Enjoy!
