Chocolate Nut Balls

1 1/3 c. Almonds (sliced or other plain)
1 1/3 c. Walnuts
1 1/3 c. Raw Oats or whole
1/2 tsp. Cinnamon
2/3 c. Honey
1/3 c. peanut butter
 ~1 Tblsp. vanilla
1/2 tsp salt
1/2 tsp baking soda (optional for more of a cookie dough taste)
1/3 c. chocolate chips - mini work best or grind up regular ones

In food processor, grind almonds, walnuts and oats up into a fine sand-like meal.
Mix in cinnamon, salt, soda and chocolate chips.
Then mix in vanilla, peanut butter and honey, until sticky.
Roll into balls and store in the freezer.

Edible Cookie Dough for One


Serves 1 or MORE (really enough for 3 or so people to have a snack!)
The perfect way to enjoy a sweet treat and not overeat!
Ingredients
                 1/2 cup packed brown sugar
                 2 TBSP butter, softened
                 1/8 tsp vanilla (1 tsp. imitation vanilla)
                  1 and 1/2 TBSP milk
                  1/3 cup flour
                  Pinch of salt
                  Whatever add-ins you like: chocolate chips, M&Ms, nuts.
Instructions
  1. Combine softened butter and brown sugar with a mixer on low for just under a minute.
  2. Gently stir in vanilla, milk, flour and salt with a spoon.
  3. Then combine the mixture with the mixer on low for about 30 seconds.
  4. If you have ad-ins, pour them in and stir in with a spoon.
Set it in the fridge for about 30 minutes before eating.

Could double and freeze some for later (in balls or clumps to make easy for a quick sweet fix)

Deer Summer Sausage

Prep Time 4 days.

6 lb. ground deer meat
1 1/2 tsp. mustard seed
6 Tblsp. Tenderquick
3 tsp. garlic powder
2 tsp. onion powder
3 tsp. hickory smoke salt
3 Tblsp. water
2 tsp. course ground pepper
2 tsp. liquid smoke
2 tsp. Accent (MSG)
2 tsp. paprika
2 tsp. red food color (optional)
2 Tblsp. corn syrup


Day 1: Mix ingredients and Refrigerate.
Day 2: Knead well - Refrigerate.
Day 3: Knead well - Refrigerate.
Day 4: Knead and form into 6 rolls wrapped in foil.
(Rub a little oil on foil to prevent sticking.)
Put 2 c. water in bottom of broiler pan in oven, this will help keep sausage moist. Place rolls on broiler pan rack and Bake at 170 degrees for 1 1/2 to 2 hours.

Keep refrigerated. Can also freeze if desired.
When we made this last - it seemed pretty salty. May look at decreasing some on one of the salt type ingredients.

Vegetable Pizza

1 package refrig. crescent rolls
1- 8 oz cream cheeze
1/3 cup mayonaise
1/2 tsp dill
1/4 tsp garlic poowder
1/4 tsp seasoned salt
(instead of above seasonings you can use 1 tsp of dry ranch dressing mix)
Press crescent rolls onto pizza pan or 8 x 13 pan sprayed with Pam
Bake 375 until brown (10 min)
Mix next 5 inged and spread on cooled crust. Top with chopped veggies of your choice or season.
In fall I use cucs,halved cherry tomatoes,onion, carrot
Winter- broccoli, cauliflauer, carrots, onion, radishes
etc, etc..
