Buff's Broccoli Salad

1 head of Broccoli
1 head of Cauliflower
1 pkg Bacon - fried and crumbled into bits
1-2 c. Craisins
1/2 c. sunflower seeds
1/4 c. onion or as desired

Dressing:
1 1/2 c. Mayo
3 Tblsp. sugar
1 Tblsp. vinegar

Cream together dressing and mix in veggies and other ingredients.

Crunchy Pea Salad

1 pkg. (10 oz.) frozen peas - thawed
1 c. celery
1 c. cauliflower florets (can use more if desired)
1/4 c. green onion, diced
1 c. cashews, chopped
1/2 c. sour cream
1/2 to 1 c. ranch dressing
1/2 c. bacon, crisply cooked & crumbled

Combine all, except bacon. Mix well. Chill until ready to serve, add bacon.

Zucchini Salad



SERVINGS: 8

METHOD:
TIME: Prep: 15 min. + chilling
Ingredients:
4 medium zucchini, sliced (about 5 cups)
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped (I left this out as I didn't have any)
2 jars (4-1/2 ounces each) sliced mushrooms, drained
1 can (2-1/4 ounces) sliced ripe olives
1 can (8 ounces) sliced water chestnuts, drained
1 envelope ranch salad dressing mix
1 cup Italian salad dressing
Leaf lettuce, optional
Directions: In a bowl, combine the zucchini, artichokes, mushrooms, olives and water chestnuts. Combine the ranch dressing mix and Italian dressing; pour over vegetables and toss to coat. Cover and refrigerate for several hours or overnight. Drain; serve in a lettuce-lined bowl if desired. Yield: 8 servings. (I didn't have ranch dressing mix on hand, but had Good Seasons Italin dressing mix so used that and 1 c. of ranch dressing instead) - This was taste tested by RaeAnn and Jane. German Potato Salad

10 lbs. Potatoes
3/4 c. oil
1/2 lg. onion chopped
1 c. sugar
1 Tblsp. salt
pepper

Mix together:
1/2 c. water
1/4 c. vinegar


Cook, cool, peel and dice potatoes
1)Add oinion and oil - mix well.
2)Add sugar, salt and pepper - mix well.
3)Add water and vinegar mixture - mix.
Let set - taste test - if dry add more of the water/vinegar mixutre.

Unusual Salad

2 cups mayo
1/3 cup parmeson cheeze
1 lb bacon, fried and crumbled
1 head cauliflauer, broken into bite size pieces
1 med. onion, chopped
1 package cole slaw mix
1 tsp pepper
1/4 tsp salt
Sweetener equiv to 3 TBSP sugar
Mix all and refrigerate- (makes a large recipe so may want to make half)
I have substituted broccoli for all or part of the cauliflauer- always get positive comments when bring to a potluck!

Eula Mae’s Mega Macaroni Salad

3 c. elbow macaroni (uncooked)
¼ tsp. salt
1 large or 2 small carrots
2 c. celery
1 large cucumber
1 green pepper
1 small onion
1 small tomato

Cook Macaroni in salted water until done. Then drain macaroni Mix in vegetables and add dressing. Add tomato just before serving.

Dressing:
1 c. salad dressing
½ tsp. vinegar
¼ c. French dressing
1/4 c. sugar
½ c. milk

Eula Mae was my mother. She made this for family get togethers an pot lucks especially at the end of summer when vegatables are plentiful.

Poppy Seed Dressing

3/4 c. Honey
1 tsp. dry mustard
1 tsp. salt
1/3 c. white vinegar
1 c. oil
1/2 Tbsp. poppy seeds
1 small onion chopped

Blend ingredients, then slowly add oil while blending.
Serve on lettuce.
