Fruit Pizza

Crust:
1/2 c. powdered sugar                  1 1/2 c. flour
3/4 c. soft margarine
 Mix and pat into pizza pan. Bake at 300 degrees for 10 to 15 minutes, no longer.
Mix:
1 (8-oz.) pkg. cream cheese,            1/2 c. powdered sugar
  softened                                        1 tsp. vanilla

Beat until creamy. Spread over cooled crust. Arrange any fruit on top
(kiwi fruit, grapes, peaches, blueberries).

Glaze:
2 1/2 T. cornstarch (I used 2 T.)         1/2 c. sugar
1 c. pineapple juice(I used OJ)        1 tsp. lemon juice
Mix and heat to a boil. Cook until slightly thickened. Cool and pour over fruit


For 11x17 pan I doubled the crust and cheese spread mix but made glaze amt as stated above.
To help with peaches browning - put them in the juice for glaze til crust etc was ready.
Used half Splenda in place of sugar.


MOM's Version - about the same:
1/2 c. margarine
1 c. + 2 Tblsp flour
5 packets Equal
Bake 350 degrees 8-10 min


1 pkg cream cheese
1 tsp vanilla
 7 packets Equal
1/4 c. skim milk


Glaze:
2 Tblsp cornstarch
1 c. Pinapple juice
1 tsp. lemon juice
6 packets Equal ( add after glaze has cooled)
