Crab Apple/Apple Jack

Fill a 1 gallon jar with crab apples (stems and all).
Add 3 c. sugar and 1 liter of vodka.
Brew at room temp. for 90 days, rotating/mixing jar periodically (at least every 30 days).
After 90 days pour liquid off of apples and strain with very fine strainer to remove any particles.
Store in bottles. Serve chilled.
Makes about 2 liters.

We have made this with both green and darker red crab apples. From our experience it seems the green ones make a better tasting apple jack.
