Broccoli Cheese Soup

2 Tbsp. minced onion
1/4 c. margarine
1/4 c. flour
1 1/2 c. milk
1 (13 oz.) can chicken broth
1 (10 oz.) frozen broccoli
dash of salt and pepper
4 slices of American cheese

Cook broccoli. In separate pot, saute onions in margarine. Remove from heat and add flour - stir until creamy. Gradually add milk stirring constantly, add chicken broth, heat and stir until thickened and smooth. Slowly add cheese, heat and stir until melted in and smooth. Add drained broccoli and seasonings. Simmer 10 minutes, stirring frequently. Add more milk if desired.

I usually make my broth from stock (2 tsp. stock to 16 oz. of water)
