D&S's Venison Sausage

Sausage 30lbs recipe:
·        60/40: Gr. Venison/Gr. Pork  or  18lbs Venison and 12lbs Pork
·         West Dakota Meats Country Sausage seasoning mix for labeled for 25 lbs.
(secret mix but is very similar to Grandpa Josh’s brand Country Sausage mix the only difference being white sugar vs brown)
·        4 Tblsp Ground Black Pepper
·        2 C. Brown Sugar dissolved in a quart of warm water
·        3 lbs High temp Cheddar Cheese
·        Add water as necessary to achieve the desired consistency
·        Smoke – 1 to 1 ½ hrs. at 170 degrees

 Packaged in Food Saver 11inch wide roll – cut into 8 ¼ in bags. Used approx. 30ft. 2 links per bag.
