Many people have not heard of fattagy-man or fattigman but they were always a treat for us by Grandma Mort, a full Norweign. I have tried many times but have not quite got the knack of these crispy fried treats.
6 eggs- beat well
6 tbls. sugar
6 tbls. cream
1 tsp. or more vanilla
flour
Mix eggs, cream, sugar. Add flour until right consistency (hard to achieve even for Norwegian veterans). It should be stiffer than sugar cookies, but not as stiff as piecrust, according to Grandma. Roll on floured counter until paper-thin. Cut into diamond shapes with slit in middle. Lift from counter and stretch the corners more. Drop into deep fat fryer until it comes to top and then turn. Fry until golden brown on both sides.
Alternate Recipe
3 egg yokes
3 tablespoons sugar
3 tablespoons heavy whipping cream
1 teaspoon vanilla
1-1/4 cup floor
Beat egg yokes and sugar well with mixer. Add cream and vanilla and mix well with mixer. Add floor little by little folding with a spoon.
I do have better luck with this recipe.
