Heat oven to 400 degrees.
Grease muffin tin cups.
2 eggs
1 c. milk
1 c. flour
1/2 tsp. salt
Beat eggs slightly - then add remaining ingredients and beat just till smooth - do not over beat.
Fill muffin cups 2/3 full. Bake 25 minutes - then lower oven temp. to 350 degrees and bake for 10- 15 minutes or until golden brown.
Serve hot. Mmmm...put butter in the airy middle for melted buttery goodness. :)
Other baking option - bake at 450 degrees for 30 minutes - DO NOT preheat oven.
