Grandma's Apple Cake

4 C. fresh diced apples
2 C. sugar

Mix above ingredients.

Add: 2 tsp. vanilla
1/2 C. oil
2 eggs, well beaten
2 C. flour - sift after measured
2 tsp. soda
1 tsp. salt
2 tsp. or less cinnamon (you can also use nutmeg)

Mix together & bake for 40-50 minutes @ 350 degrees.

Orange Sauce: 1 C. brown sugar
1 C. orange juice
3 Tbsp. flour (or 1/2 Tbsp. cornstarch)
1/2 C. water
6 Tbsp. butter

Mix sugar & flour well - add water, OJ & butter. Cook in heavy pot or double boiler until thickens. Serve warm over cake.

I make this same cake but add 1/2 cup chopped walnuts and top it with Caramel Sauce.
1 c brown sugar, 1/2 cup each margarine & cream, 1 TBSP flour, 1 tsp vanilla.. bring to a boil stirring.. serve warm on cake. Ruth
