Creamy Zucchini Soup

2 Tbsp. chopped onion
3 Tbsp. butter
3 Tbsp. flour
2 c. milk
1 c. water
1 tsp. chicken bouillon granules
1/2 tsp. salt
1/4 tsp. pepper
1 lg. zucchini shredded
1 c. shredded cheddar cheese

Saute onion in butter until tender. Stir in flour.
Gradually stir in milk, water, bouillon, salt and pepper. Bring to a boil, cook and stir for 2 minutes or until thickened.
Stir in zucchini, simmer uncovered for 10 minutes.
Stir in cheese until melted.

Serves 4
