Twice Baked Potato Casserole

About 10 baking potatoes
1 lb bacon
1 small onion, chopped or chives
1 large tub of sour cream
2 bags of shredded cheddar cheese

Bake the potatoes until they are tender, but not overly soft. If you cook them too long they will be mushy & fall apart. Cut potatoes into bite size pieces. Cook bacon & crumble/chop into small pieces. In a buttered 9X13 pan, put a layer of potatoes, cover with a layer of sour cream, onion, bacon pieces & cheese. Repeat until potatoes are gone. Top layer should be sour cream, onion/chives, cheese & bacon. Bake @ 350 for about 45 minutes, until hot and bubbly.
